POTATO IN COCONUT MILK


INGREDIENTS

Potato - 2 medium (cut in to small cubes)
Onion - 1 large (finely sliced)
Dry red chilli - 3
Mustard seeds -1/4 tsp
chilli powder - 1 tsp(can add more depending on your taste)
coriander pdr -1 tbsp
Garam masala - 1 tsp
Thick coconut milk - 1 cup
Curry leaves  - 1 stalk
Oil
Salt

METHOD


Heat oil in a pan.Add sliced onions ,fry until it turns golden brown .Mean while make a fine paste of  chilli powder,coriander powder,garam masala and salt with 2 tbsp water.When onion becomes golden brown pour this masala paste and fry till oil appears.Add cubed potatoes .Fry for some time till masala gets well coated.Pour in 1 cup water cover and cook till potato is almost done .Reduce flame add thick coconut milk bring it to a boil.Remove from fire.In another pan heat 1 tbsp oil splutter mustard seeds,dry red chilli and curry leaves .Pour this over the curry and mix well.
