BAKED POTATO SAMOSA

Samosa is a very popular indian snack served with mint chutney.Its usually a pastry filled with vegetables deep fried in oil. So confused by the name baked samosa?I know samosas are good when its deep fried in oil i too like it that way, but this is a very good alternative for those weight watchers to indulge on little snack.The idea of baking samosa is adapted from a cooking show in food network 'Aarti party'. For all those who watch food network you will be familiar with the name Aarti Sequeira .She is an indian chef and winner of the sixth season of Food Network's reality television show.Anyways even though the samosa filling recipe is my own .I was inspired by her cooking show to try an alternate version of our regular deep fried samosa.So i thought it was worth mentioning about her in my post..


Note: I made pastry sheet from scratch for this recipe..If you have ready made pastry sheets you can use them.

INGREDIENTS

Pastry sheet recipe:

All purpose flour - 1 cups
Butter /oil - 4 tbsp
Cold water - 1/4 cup or enough for making firm and smooth dough 
salt - as required
Egg - 1 (used for egg wash while baking)

Filling recipe:

Potatoes - 2 large boiled
Green peas - 1/2 cup cooked (i used frozen peas)
Onion - 1 finely chopped
Ginger garlic paste - 1 tbsp
Cumin seeds - 1 tsp
Coriander seeds - 2 tsp crushed coarsely
Green chillies - 3 to 4 chopped
Garam masala - 1/2 tbsp
Coriander leaves - 1/4 cup
Lime juice - 2 tsp
Salt - to taste



In a large bowl mix all purpose flour, butter, salt and water.Knead to make a firm smooth dough .keep it covered for 15 to 20 minutes.Meanwhile make the filling required for samosa.
In a frying pan heat oil,splutter cumin seeds,add chopped onion, ginger garlic paste and salt .Saute until the onion becomes soft .Add green chillies and coriander seeds to this mix well .To this add mashed boiled potatoes mix and cooked peas. mix well .check for salt if not enough add some more.cook the mix for 1 minute. Add garam masala, coriander leaves and lime juice at the end ,mix well and cook for 1 more minute .Remove from flame ,keep aside for it to cool down.


Next make dough in to small balls ,roll out each portion in to round shape.Cut the round in between to make two semi circles.Put some  potato mix in the center .Lift one corner and fold it over in to a cone shape .Lift the other edge and fold it over the same way to the opposite end. Press slightly to seam the ends.Detailed steps of how to fold samosa is shown in the above photo.After all the samosas are filled with potato, Beat the egg slightly and egg wash the top of these samosas.Bake for 15 to 20 minutes at 400F on both sides or until both sides  turn golden brown. Serve hot with mint chutney or ketchup.
