OVEN BAKED FRITTATA

So what do you all eat for breakfast?Breakfast at my place is usually cereals , bread and jam or smoothies. Things that can be done in a jiffy..Sunday is the day when i try to make something nice or elaborate. Frittata's are the perfect breakfast for a Sunday morning. Frittata is a flat Italian omelet which is usually prepared in a cast iron skillet but  i baked it in oven.


Eggs - 6
Onion - 1/4 cup
Potatoes diced - 1 cup
Bell pepper - 3/4 cup
Tomato - 1 thin round slices
Italian seasoning - 1/ tablespoon
Pepper - 1/2 teaspoon
Olive oil - 1 teaspoon
Grated cheddar and Parmesan cheese mix - 1/2 cup
salt to taste




Method
Preheat oven to 350F.In a medium bowl beat 6 eggs ,pepper, Italian seasoning and salt well.You dont have to over beat the eggs just enough to break egg yellow and white together. Add diced onion, potato and bell pepper to this.mix well.Grease a 9 inch baking pan with olive oil.Pour egg mix in to the pan.Cover the egg mix with round tomato slices.Sprinkle cheese on top of this.Bake for 15 to 18 minutes or until the top turns golden brown.Cut it into pieces and serve.I served it with a bowl of fresh fruits and orange juice
