Pachadi is a kerala side dish for rice ,it can be made with vegetables like beetroot, carrot, ladies finger, tomato.


1.Pineapple - 1 cup
   Salt - to taste
   Turmeric powder - 1/4 teaspoon
   Yogurt - 1 cup
3.Green chilli - 2
   Cumin seeds - 2 tsp
   Coconut grated - 1/2 cup
4.Sugar - 1tsp (optional)
5.Curry leaf - 2 stalks
   Mustard seed - 2 teaspoons
   Oil - for tempering


Cut pineapple in to small cubes.Boil pineapple in 1 cup of water along with salt and turmeric powder.While its getting boiled ,grind coconut,cumin seeds and green chillies.Add the ground paste in to the pineapple mix.Boil for 2 to 3 minutes till the pineapple pieces are cooked.Switch off the burner ,once its its cooled add yogurt little by little ,mix it well in to the pineapple coconut mixture.Do not add yogurt while the pineapple  mix is still hot ,this can curdle the curry.Add sugar mix well.Add more salt if needed as we have already added salt while boiling pineapple.At the end do tempering with no 5 ingredients,pour on top of the pachadi. Mix well and serve with rice.
