Ripe bananas - 3

Eggs - 2 well beaten
All purpose flour - 2 cups
Sugar - 1/2 cup
Walnuts - 1/2 cup coarsely chopped
Cinnamon - 1 teaspoon ground
Baking soda - 1 teaspoon
Salt - a pinch


Preheat the oven to 180 C/350F. In a food processor combine bananas and eggs .Do not over beat ,just enough to mix it well.Transfer this to a large bowl. Sift in the flour, cinnamon, baking soda and salt,mix well.Then add sugar and walnuts ,fold in well.Pour in to a greased baking loaf pan and bake for 1 hour, or until a skewer inserted comes out clean.
