CARROT KUZHIPANIYARAM



Idli/Dosa batter - 2 cups
Onion chopped - 1/4 cup
Carrot grated - 1/4 cup
Green chilies finely chopped - 2-3
Ginger grated - 1 tablespoons
Mustard seeds - 1/4 tsp
Urad dal - 1 teaspoon
Asafoetida - pinch
Cashew nut chopped - 1 tablespoon(optional)
Coriander leaves - 1tablespoon chopped
Salt
Oil

Method

Heat 1/2 tablespoons of oil in a pan. Splutter mustard seed and urad dal. Add grated ginger and green chilies chopped and asafoetida.  Add chopped onions and salt saute for 1 minute. To this add grated carrot, coriander leaves and chopped cashews.Saute for one more minute.Mix this with dosa batter.Heat paniyaram chatti. Pour few drops of oil in to each hole.Pour the batter and cook on medium heat until the bottom part is crispy.Turn and cook the other side until crisp.Serve hot with chutney.
