JEERA RICE



Ingredients


Cooked Basmati Rice - 2 cups
Onion - 1 chopped finely
Jeera/cumin seeds - 1 1/2 tsp
Green chilli  - 1 to 2 slit length wise (or to taste )
Bay leaf - 1
Black cardamom - 1
Green cardamom - 2
Cinnamon stick - 1'' stick
Pepper corns - 1/2 teaspoons
Cashew nut - 2 tablespoon 
Salt to taste 
water - 1 tablespoon
Ghee/ butter - 2 tablespoons (if you do not want ghee can always replace with oil,but ghee gives a wonderful flavor to this rice ) 





Method

Cook basmati rice and keep aside. Left over rice from previous day works better for this recipe. Heat a pan on medium ,add ghee once oil is hot add cumin seeds, pepper corns, bay leaf, cardamoms and cinnamon. Add cashew nuts fry till it gets golden brown. Add green chilli and saute. 


Now add onion and fry till it becomes clear. Add little salt so that onion gets cooked faster. To this add cooked basmati rice , mix well.Check salt,if required add more. Sprinkle 1 table spoon water over the rice. Cover and cook on very low flame for 2 to 3 minutes. Check in between so that bottom of the pan does not get burned.   Remove from the flame and serve hot.
