VEGETABLE KURUMA




Ingredients

Asssorted veggies - 2 cups small cubes ( cauliflower,carrot,beans,green peas,potato,corn kernels)
Tomato - 1
Ginger garlic paste - 2 teaspoons
Coriander powder - 2 teaspoon
Turmeric powder - 1/4 teaspoons
Green chilli - 2 (or to taste)
Mustard seeds - 1/4 teaspons
Curry leaves - 1 stalk
pepper corns - 4 to 5
Black cardamom - 1
Thick coconut milk -1/2 cup
Salt
Oil - 2 tablespoons


Coarsely Grind 

Onion - 1 large finely chopped
Ginger - 1/2 inch
Garlic - 3 to 4 cloves
Green chilli - 1or 2 (according to taste)
cinnamon stick - 1"
Green cardamom - 2 to 3
Clove - 4
Bay leaf -1
Coriander leaves - 1 heaped tablespoon



Grind to smooth Paste
Coconut - 1/4 cup
Fennel seed - 1/4 teaspoons
Cumin seeds - 1/4 teaspoons
Cashew nut - 5 to 6 (soaked in hot water for 10 minutes)



Method


First grind the ingredients mentioned under (to grind) to a fine paste and keep aside . Then grind ingredients mentioned under (coarsely grind ) .In a pressure cooker heat 2 tablespoons of oil. Splutter mustard seeds, curry leaves ,pepper corn and black cardamom. Saute till aroma comes ,now add ginger garlic paste, green chilli.

To this add coarsely ground onion mixture. Saute till it becomes cooked and raw onion smell goes away. Add turmeric powder saute for few seconds, to this add coriander powder saute till raw smell goes away. Add chopped tomatoes cook till it gets mushy.
Next step is to add the vegetables and finely ground coconut ,fennel seed, cumin seed and cashew nut paste. add 1 1/2 cup water mix everything well .Cover the pressure cooker and cook for 2 whistles. Open the cooker after all the pressure is released. if its too watery cook for few minutes uncovered then keep on low flame and add coconut milk. Do not boil after adding coconut milk.
Mix well Serve with rotis , rice or appam
