Ingredients
Bhindi/ladies finger/okra - 2 cups cut in to round pieces
Onion - 1 medium
Tomato - 1 medium
Ginger garlic paste - 1/2 teaspoons
Cumin seeds /Jeera - 1/4 teaspoon
Ajwain - 1 pinch
Turmeric Powder- 1/4 teaspoons
Corriander powder - 1 teaspoons
Garam masala - 1/4 teaspoons
Chilli powder- 1 teaspoons or to taste
Salt
Oil - for frying onion and bhindi
Method
Wash, pat dry and cut bhindi in to small round bite size pieces. Heat 3 to 4 tablespoons oil in a wok/kadai . Fry them till they are completely cooked. Drain them and keep aside . Heat oil in another pan add cumin seed and ajwain when they splutter add ginger garlic paste, chopped onion saute till onions are cooked Now add all the dry powder masalas . Fry till raw smell goes away. Now add chopped tomatoes and 1/2 cup water , cook uncovered until tomatoes get mushy and water evaporates to form a thick masala. Add salt . Now add the fried bhindi to this. Mix well so that the masala coats bhindi. Serve with hot rotis or rice.
